Dolley Madison's Soft Gingerbread Cake

1 cup molasses
2/3 cup butter (Dolley used beef drippings...pretty sure butter will taste better)
1 tsp baking soda
1/4 cup hot water
1 cup of even hotter water
2 1/4 cups flour
1 tbsp ground ginger
1 tbsp ground cinnamon
powdered sugar (to sift on the top)

Mix the molasses and butter. Dissolve the baking soda into the hot water and mix together with the molasses and butter.

Sift the flour, ginger, and cinnamon together, then add that mixture alternately with the even hotter water into the molasses/butter mixture. Mix until well blended and pourable.

Bake at 350 degrees in a well-greased cake pan for 30-40 minutes, or until a toothpick comes clean. Sprinkle the baked cake with sifted powdered sugar.
