Canasta Party Deli Pinwheel Bites

4 - 10 inch flour tortillas
8 oz. herb flavored cream cheese
12 oz. thinly sliced deli ham
20 spinach leaves
7 oz. sun dried tomatoes
4 oz. sliced black olives
8 oz. shredded cheddar cheese

spread the tortillas out like you're working an assembly line. Spread 2 oz. of cream cheese on each tortilla, making sure to get as close to the edges as possible or you'll end up with some bites out of balance. Split the deli ham, spinach leaves, tomatoes, olives, and cheddar cheese into 4 equal parts and layer it all over the top of the cream cheese. The sun dried tomatoes work well if they are lined up down the center of each one, that way there will be some tomato in every bite.

Roll each tortilla up like a pumpkin roll, wrap it in plastic wrap and refrigerate them for 8+ hours. Take the plastic wrap off and slice each tortilla into 1 inch bites. Arrange them on a platter for your card party guests, they make a very pretty presentation!
